Buoyed by a hit single in altoist Paul Desmond's ubiquitous "Take Five," Time Out became an unexpectedly huge success, and still ranks as one of the most popular jazz albums ever. But for once, public taste was more advanced than that of the critics. ![]() It was a risky move - Brubeck's record company wasn't keen on releasing such an arty project, and many critics initially roasted him for tampering with jazz's rhythmic foundation. For NPR Jazz, I'm Murray Horwitz.Dave Brubeck's defining masterpiece, Time Out is one of the most rhythmically innovative albums in jazz history, the first to consciously explore time signatures outside of the standard 4/4 beat or 3/4 waltz time. It's called Time Out, The Dave Brubeck Quartet, it's on the Columbia label. HORWITZ: Happily, indeed because it's still a very listenable album and one that you should have in your Basic Jazz Record Library. HORWITZ: Well, it shows that things don't always work out the way you want them to. Paul Desmond said that "Take Five" was never meant to be a big hit on the charts, it was meant to be a drum solo for Joe Morello, primarily. SPELLMAN: It was a huge hit because it was so accessible. HORWITZ: What's extraordinary is that it was so very experimental and at the same time it was a huge hit. They don't stay in one rhythm on very many of these pieces. And as I say, you might hear them changing that as they go along. HORWITZ: This is getting a little technical, but I see what you mean - in other words, where you're used to hearing four beats per measure - one-two-three-four - we might hear one-two-three-four-five, one-two-three-four-five. So you might go from a nine back to a four. Not only that, but they thought that they would see what would happen if they changed rhythms during the course of a tune. So they thought that they would try to see how they could stitch it all together. SPELLMAN: Fives and sevens, that we're hearing in all this modal music of the Middle East and of India. SPELLMAN: American dance rhythms, absolutely, which is basically four-four, and then later, after Max Roach and Clifford Brown, there were some excursions in three-four time, but these guys were wondering.How do we make use of these nines and these. Jazz as you know, has been wed to dance rhythms for most of its history. SPELLMAN: Well, Dave Brubeck had taken the band on a tour of the Middle East and India in the late 1950s, and they were struck by the variety of rhythms that they heard. Let me ask you, how did this come about? I mean, how did they start experimenting with different time signatures? ![]() He gets different sounds off of one instrument. HORWITZ: It's true, because he gets a stunning array of timbres, just a different like, orchestral sound out of the drum kit. SPELLMAN: Well, Joe Morello is one of the best technical drummers in all of jazz, and for this kind of work here in which the time were so various, it was important to have a musician who could handle it, and make it all seem natural and keep it going together. HORWITZ: Why is Joe Morello, the drummer who Dave Brubeck stole from Marian McPartland, the right drummer for this group? Bass playing for musicians like this is very difficult, because it's hard in a harmonically complex piece of music to choose the right note out of the chord to keep the thing going forward. SPELLMAN: Eugene Wright was a very solid bass player. HORWITZ: Eugene Wright was the bass player. I have always considered Paul Desmond to be one of the great musicians in jazz for improvising a beautiful melodic line-a long melodic line that is lyrical, and that holds together impeccably. But it's also music by some very accomplished musicians who are well set in their styles. There's jazz that proceeds from Miles Davis "The Birth of Cool" records, which we'll talk about on another day. HORWITZ: And it's still really the sound that for a lot of people who aren't really jazz listeners defines what jazz is. It was a perfectly thin pizza crust, reminiscent of an artisan oven-roasted preparation. Neither of us believed the waitress, but we took her advice that “we would never be able to tell.” Well, she made a believer of both of us. The real gem we discovered that day was the cauliflower pizza crust. At that point in our lunch, my daddy was ready to drive in from Dallas the next weekend or sometime this fall to watch the changing colors and have dinner. Our waitress kept reminding us to come back on a Thursday evening where the same portion is the weekly special of $11 while they host karaoke night and special entertainment district live music nights. The country boy across from me was not sure he would have finished it, but he wanted to try! The mounded-up mashed potatoes and green beans hung out in a moat of white gravy. The flattened beef steak was over the edges of his oval restaurant dish. My dad let me do the ordering and was very envious when the cowboy next to us had a chicken-fried steak delivered to his table. From reviews, I could see they did have a great burger, but everyone kept talking about this gigantic chicken-fried steak. When we entered the front door of The Vault, I was fully prepared to have a burger and regular drop-in-the-fryer-type appetizers. They decided to settle in Van Buren, establish a ranch, and open a restaurant that would complement the other things happening in Downtown Van Buren. The Londons enjoyed riding their motorcycle through the area. The original 1900s stained glass windows remain, and a tin roof inlay atop 18-foot ceilings helps visitors understand a time gone by. Over time, many retail businesses occupied the spot at 7th and Main until Lonnie and Mindy London opened The Vault 1905 Sports Grill. During their time, they drew timelines on the walls of historical events. While the backside was still referred to as Hinkle Hall and used for barbershops and stores throughout the years, the Press Argus Newspaper moved into the second floor, above the bank, through the 1920s, where many hand drawings still adorn the walls from the editorial room. In 1904, Citizens Bank purchased the Hinkle Corner, and John Blevins was issued a contract to build the building standing today at 7th and Main Street. As downtown Van Buren grew in artistic expression, performing groups and a Glee Club shared the property with the Masons. Cool Before Topping When you fill the pie crusts with the pumpkin filling, don't over fill them. Repeat steps 1 - 4 until you have at least 18 mini pie crusts.Using a rolling pin, roll it out to the same thickness as the dough was initially.
